Quick and Healthy Chicken Cacciatore
I'm someone who cooks dinner virtually every night and because I do cook every night sometimes I just feel like I need something new to throw in the mix. I figured that maybe there are a couple of you thinking the same thing. So I am wondering if I post a recipe here and there, then maybe one of you will leave me a comment with something new to try. Here is a good healthy recipe that my kids really like and I love because it is really simple. I buy one of those Dole Light Casear salads for the side dish and VOILLA, dinner is served!
8 oz fettuccine, uncooked
2 tsp. olive oil
1 lb. boneless skinless chicken breasts cut into bite-size pieces
1 cup green pepper strips
1 cup sliced mushrooms (optional)
1 can 14 1/2 oz diced tomatoes undrained
1/4 cup Kraft Zesty italian dressing
1/2 cup Shredded low fat mozzarella parmesan cheese blend
1/2 cup chopped fresh basil leaves (or just sprinkle chicken with a little ground basil when mixing in your green peppers)
Cook pasta according to directions on package.
Heat oil in large skillet on medium-high. Add chicken, cook until no longer pink. Add peppers and mushrooms. Cook 3 mins stirring occasionally. Stir in tomatoes and dressing. Reduce heat to medium-low and simmer 5 mins or until chicken is cooked through. Drain pasta. Toss with chicken mixture. Sprinkle with cheese and basil.
Takes about 20 minutes. Serves my family of 5 easily. A serving size of 2 cups is 470 calories.
